The cheese Rey Silo is one of the most widely recognized cheeses in Asturias where for ages it has been the ingenious solution for extra milk in the small home dairies found throughout the central valleys of the Principality.
Our cheese has a minimum dry wieght content of 30%, of which 45% is fat and 35% is protein.
Its shape is a flattened cone and it normally weighs between 240 and 280 grams. Its natural rind, produced by the geotrichum culture, varies in consistency depending on the length of the aging process.
The red pepper variety of Rey Silo red is typical of the mining areas around the Aramo mountain range in Central Asturias.
